Food & Wine ’14 “Flash Report”: Cheese Ravioli

Italy, I don’t even know what to say.

OK, so I’ll admit that your Cheese Ravioli was prepared pretty well.

The ravioli was tender. The dish was balanced with just the right amount of cheese – within the pasta and baked on top.

The pasta wasn’t overpowered by sauce … which is a good thing as far as my palate is concerned. I like a mild dose of tomato sauce, but I don’t like a flood.

The bottom line is this, Italy, I miss 2012-13’s creamy beef bolognese. This recipe just DOESN’T stack up! Sorry.
